A darker alternative to the regular cold brew coffee

What is cold brew?
Simply put, cold brew coffee is coffee that has been brewed without using any heat at all, for an extended period of time, usually around 8 hours. It can be brewed at room temperature, but the most popular way is to leave to brew in the refrigerator.

Why brew coffee 'cold'?
Cold brew offers an entirely different way to brew and drink coffee. Without heat, not all of the aromatics and solubles will be dissolved. Typically with arabica coffee this means the harsher notes such as bitterness do not make it into the final brew so it offers quite a lively, rounded and smooth brew which is typically served as a long iced drink. However, our Nanyang Kopi largely uses robusta which already goes through quite an intense roasting process. The final brew is very rich and dark, with loud upfront cacao and oak. It's for those who like their cold brews to be bold and strong. It's also very very smooth. You can dilute if you need to, add milk, add sugar syrup, or as we prefer to drink it as is over ice.

Cold brew is also brewed in batches, so brewing one batch mean you'll have multiple portions ready to go without any effort other than filling up your cold brew device with coffee and water. Simple!

Our recipe is based on the Hario Cold Brew Coffee Filter In Bottle device and recipe, available widely online.

THE RECIPE
Yield:  600g cold brewed Nanyang Kopi approx.
Notes:  Intense hits of cacao and oak, very smooth and bold
Kopi:  55g 
Water:  700g filtered @ room temp or chilled
Kit:  Hario Cold Brew Coffee Filter In Bottle or similar filter-jug combo
Brew Time:  8-24 hours
  1. Add 55g Nanyang Kopi Powder to the strainer/filter, screw top to close, and set into the spout
  2. Set spout and filter into the glass bottle without the stopper
  3. Pour water gentle through the spout to saturate the Nanyang Kopi grounds
  4. Set the stopper in place and shake gently
  5. Leave to brew in the fridge for 8-12 hours for a typical strength brew, or 24 hours for a much bolder
  6. Remove the filter. Your cold brew is ready
  7. Swirl, remove stopper and serve 

Examples of what to do with your Cold Brew Nanyang Kopi:
  • serve over ice
  • sweeten with simple sugar syrup [easier to mix in than just adding granulated sugar]
  • Add a milk of your choice [evaporated works well]
